Honestly, it really just comes down to mixing for long enough to develop strength. I mix for 5-7 minutes right at the beginning and do whatever I need to in order to keep the dough in the bowl and not on me. If I mix for long enough it starts sticking to itself instead of my hands. The biggest game changer has been taking good notes so that I can make my next loaf even better. I write down how long I mixed, dough temp, time between folds…all of it. And it all goes in my sourdough recipe log book
